A Culinary Collaboration in the Skies
Emirates has unveiled a new selection of Business Class inflight dishes, crafted by renowned chefs and paired with Moët & Chandon Champagne. This summer, passengers can indulge in an exclusive culinary experience with 18 new dishes designed by Jean Michel Bardet, Moët & Chandon’s Head Chef, and Doxis Bekris, Emirates’ Vice President of Culinary Design.
The dishes, launching on select routes from May 2025, have been in development for over a year. The chefs meticulously balanced premium ingredients and expert craftsmanship to create meals that maintain their quality at high altitudes. Emirates, serving more than 77 million meals annually, ensures that these dishes meet the highest standards of taste and presentation.
Among the new offerings are starters like poached scallops paired with Moët & Chandon Grand Vintage 2016, enhancing the seafood’s delicate flavors. Vegan options such as silken tofu with soy emulsion complement Moët & Chandon Brut Impérial, creating a harmonious pairing.
Main courses include roasted duck with couscous-jus and cherry tomatoes, served with Moët & Chandon Rosé Impérial. Another highlight is the roasted turkey with sage chicken jus, paired with Moët & Chandon Grand Vintage 2016, where the dish’s depth is matched by the champagne’s elegance. Seafood lovers can enjoy seared Chilean seabass with artichoke puree and lemongrass sauce, paired with Moët & Chandon Brut Impérial.
Throughout the collaboration, the chefs considered the challenges of inflight catering, ensuring each dish could be scaled for large passenger volumes while maintaining restaurant-quality presentation. Attention was given to the plating process, allowing Emirates’ cabin crew to serve meals seamlessly at 40,000 feet.
Jean Michel Bardet, a Michelin-starred chef, brings extensive experience from luxury establishments worldwide. His expertise in pairing flavors with Moët & Chandon champagnes played a key role in designing the menu. Doxis Bekris, with his background in international fine dining, has led Emirates’ culinary innovation since 2019, continuously elevating inflight dining experiences.
Emirates’ partnership with Moët Hennessy spans over three decades, making them the largest airline buyer of champagne. Their exclusive offerings include Dom Pérignon Vintage 2015, Moët & Chandon Grand Vintage 2016, and Veuve Clicquot Yellow Label, among others.
